Chef Tottie Kaya

Born and raised in Laos, this Asian beauty grew up in a family of cooks; they all pitched in to help their mother, a renowned caterer. Specializing in Laotian, Thai, Vietnamese and Chinese cuisines, Tottie learned to cook each authentic style at a very young age.

Though it was years before she applied this knowledge professionally, Tottie ultimately moved to the U.S., built a family (husband Mark and sons Michael, Mitchell and Mathew), and worked as a technician (and interpreter for the hearing impaired) at Motorola. Forever experimenting in the kitchen, she contributed her dishes for special friends' and coworkers' events.

Tottie opened her first restaurant, Shanghai Palace, in 2003. Rapidly garnering a strong following of loyal patrons, including exceptional chefs from Valley hot-spots, positive reviews soon followed. In 2006, Tottie was featured on the cover of Food & Life magazine as one of the Valley's Best New Chefs.

In response to this initial success, Tottie expanded Shanghai Palace and changed the name to Tottie's Asian Fusion, reflecting the addition of an authentic Japanese sushi bar (and Master Japanese Chef). This earned her prominent accolades from The Arizona Republic, Phoenix Magazine, numerous local publications and even Sunset Magazine.

Thriving despite the economy, Tottie opened her second location, Tottie's Asian Fusion2 in fall, 2009. This second location includes both patio dining and a full-service bar. Holding true to the integrity of her original location, Totties Asian Fusion2 is as beautiful and affordable as it is delicious. Though the menu is anchored by the dishes that made her original location a success, it includes new items debuted monthly, like Asian-wraps, Tottie's Tapas and refreshing fresh-fruit based cocktails.

Tottie's plans for the future? Continuing efforts to share her own culinary heritage while offering a "fusion" of dynamic, authentically prepared Asian cuisines to patrons at both locations.
